Ingredients
  

  • 1 Cup Oats
  • 1 Cup Coconut
  • 1 Tsp Cinnamon
  • 1 Tsp Baking Powder
  • ¼ Tsp Baking Soda
  • 1 ½ cup banana approximately 3 medium-sized bananas
  • ¼ Cup Unsalted Butter
  • 1 Tsp Vanilla Extract
  • ¼ Cup Honey

Instructions
 

  • Preheat the oven to 350 degrees F (180 degrees C). Prepare two cake molds by lining them with parchment paper and greasing with ghee.
  • In a blender, combine1 Cup Oats, 1 Cup Coconut, 1 Tsp Cinnamon, 1 Tsp Baking Powder, and 1/4 Tsp Baking Soda Blend until finely ground.
  • Add 1 1/2 cup banana, 1/4 Cup Unsalted Butter, 1 Tsp Vanilla Extract, and 1/4 Cup Honey to the blender. Blend again until the batter becomes smooth and well-combined.
  • Divide the batter evenly into the prepared cake molds. Bake for 28-30 minutes or until a cake tester inserted into the center comes out clean.
  • Remove the cake molds from the oven and allow them to cool down.
  • Prepare the frosting by using an electric hand-held mixer to beat together cream cheese, butter, honey, and vanilla extract until smooth and creamy.
  • To assemble the cake, place one cake layer onto a plate and spread 1/4-1/3 cup of frosting on top. Place the second cake layer on top and spread the remaining frosting over the surface.
  • Slice the Healthy Banana Cake and serve.
