Ingredients
  

  • 4 Bell Peppers any color
  • 1 Cup onion Chopped
  • 2 Garlic Cloves Chopped
  • 1 Cup paneer Indian cottage cheese
  • Salt To taste
  • 1 Cup Quinoa
  • 1 tsp Ghee
  • ½ Cup Cheese Grated
  • ½ tsp Pepper Powder
  • ¾ Cup Tomato Chopped
  • 1 Cup red chili powder (optional)Salt to taste Water for kneading Ghee or oil for cooking

Instructions
 

  • In a pan, cook quinoa with 1 Cup red chili powder (optional)Salt to taste Water for kneading Ghee or oil for cooking until it becomes fluffy. Set it aside.
  • Cut the top of the 4 Bell Peppers and remove the seeds from the inside.
  • In a pan, heat 1 tsp Ghee Add 2 Garlic Cloves and 1 Cup onion, and sauté over medium flame for a few minutes.
  • Add 3/4 Cup Tomato and cook until they turn mushy. Then, add 1 Cup paneer, Salt, and 1/2 tsp Pepper Powder. Stir well.
  • Mix in the cooked 1 Cup Quinoa and continue stirring for another 2 minutes until the mixture thickens.
  • Turn off the flame and add grated 1/2 Cup Cheese. Preheat the oven to 180 degrees C (350 degrees F) for 15 minutes.
  • Stuff the bell peppers with the quinoa mixture and arrange them in a baking dish lined with aluminum foil.
  • Bake the stuffed bell peppers on the middle rack for 20 minutes until they become slightly tender. Then, broil for an additional 2-3 minutes until the cheese melts.
  • Serve warm and enjoy this healthy and flavorful dish.
