Ingredients
  

  • 1 Tomato medium-sized
  • ½ cup Pumpkin cubes
  • 1 Garlic clove crushed
  • ¼ cup Water
  • 2 tbsp Lemon Juice
  • 2 pinch Pepper
  • 2 tbsp Ghee
  • â…› cup Cooked Rice mashed
  • ½ tsp Ginger grated

Instructions
 

  • Cut 1 Tomato and 1/2 cup Pumpkin into cubes.
  • Heat 2 tbsp Ghee, add 1 Garlic clove and pumpkin, simmer for 10 mins.
  • Saute roasted tomatoes for 2 mins.
  • Add 1/4 cup Water and simmer for 10 mins.
  • Blend into a smooth puree.
  • Return to pan, add mashed 1/8 cup Cooked Rice, simmer for 1 min.
  • Sprinkle 2 tbsp Lemon Juice juice, add 1/2 tsp Ginger grated.
  • Stir well and serve the soup.
